Favorite Recipes: Veggie Denali Dogs



VEGGIE DENALI DOGS

After a big day of hiking in Denali, these hungry vegetarians craved a hearty meal! Inspired by a recipe from OTZI Gear, we created our own plant-based version -- think "meatball subs" on a stick! We used our famous backcountry pizza dough recipe, stuffed it with cheese, and wrapped it around some veggie sausage. Smothered in spicy marinara, it was quite a treat...and so fun to make and eat!

Ingredients

1 package of your favorite plant-based sausage (we love Tofurky Italian style and Beyond Beef Italian Sausage)

1 prepared pizza dough (our recipe is so fun, easy, and versatile)

1/2 cup shredded or crumbled cheese (mozzarella or provolone works well)

3 TBSP olive oil infused with 2 garlic cloves (crushed), and a dash of sea salt

1 cup or your favorite marinara sauce 


Instructions

Cut each veggie sausage into 4 large chunks.  Skewer and roast over grill for just a few minutes.  Remove from skewer and let cool a bit.

Roll out prepared pizza dough into a 12-14" pie, then cut into 3" wide strips.

Sprinkle shredded or crumbled cheese onto dough strips, then roll and pinch closed.

Skewer the dough on one end, add a chunk of sausage, then wrap the dough around the sausage chunk.  Repeat for the remaining pieces of the sausage link.  

We found 3-4 chunks of sausage with dough wrapped around then worked well on each skewer.

Place the wrapped skewers over the grill and baste with olive oil infused with fresh garlic and dash of sea salt.  

Cook over medium heat until dough has browned, turning the skewers as necessary to make sure all sides and browned and the cheese inside has melted.

While dogs are browning, heat up the marinara sauce.

Remove from skewers, smother with sauce and enjoy!  

We found that 2 large veggie sausages and about 1/3 of the dough was plenty for dinner for the 2 of us.  

We used the remaining dough to make dessert!  We stuffed it with Nutella and raspberries instead of cheese and added whipped cream when it came off the grill...soooo yummy!
