Favorite Recipes: Summertime Spring Rolls


SUMMERTIME SPRING ROLLS

It's summertime!  But, sometimes just the idea of heating up the RV kitchen while cooking is unbearable.  And, it's even too hot to cook outside.  When the temps hit the 90's, it's time to start thinking about delightfully cool dinners that aren't just another salad.

It's not often that a 10 year old shares his favorite dish with us, and it makes it into our regular dinner repertoire.  These build-your-own rolls are fresh, crunchy, delicious, and require very little cooking.  Note: We don't provide quantities in this recipe, as everyone likes a little bit more of this or that. Feel free to get creative with this one -- our 10 year old friend Carter sure did!

Ingredients

  • Spring Roll Wrappers (3-4 per person)
  • Rice Noodles
  • Cabbage, finely shredded
  • Green Onions, finely chopped
  • Red, Orange, Yellow Bell Peppers, julienned
  • Cucumbers, julienned
  • Baked Marinated Sesame or Teriyaki Tofu (or cold meat of your choice), chunked or shredded
The only thing that needs to be cooked are the rice noodles.  Just boil a couple cups of water, pour over the noodles and let them sit for a few minutes.  Once tender, rinse with cold water.  While the noodles are soaking, prepare the rest of the ingredients, each in their own bowl or set-up like a charcuterie board.  

The idea here is that each person has a dipping bowl full of water that they use to moisten their own wrapper.  Be sure to wet down both sides of the wrapper. Once it is sticky,  load up the ingredients, along with the dressing below, and wrap up like a burrito.



Peanut Sauce Dressing

This peanut sauce dressing is what makes these rolls even more delightful!  If you have peanut allergies, substitute for almond butter.  Below are the approximate quantities of what goes into the dressing.

  • 3/4 cup Crunchy Peanut Butter, sans sugar
  • 4 TBSP Rice Vinegar
  • 2 TBSP Low Sodium Soy Sauce
  • 1 tsp Hot Sauce (your favorite)
  • Water (just enough to make it more like a sauce than a spread)
Mix first 4 ingredients together in a peanut butter jar and stir until creamy and smooth.  Add just a bit of water (approximately 1 TBSP at a time) to make the spread more like a sauce or dressing.
