This is a compilation of the fun, gourmet campfire recipes showcased in our "Turn Your Camp Cooking Up to 11!" seminar hosted by the 2020 Grand Rapids Camper, Travel, and RV Show! In this seminar, we share our tips and recipes developed over 8.5 years of living on the road in our tiny vintage trailer.

Recipes:

Flatbread with Smoked Mozzarella, Pesto, Caramelized Onions, and Fresh Tomatoes Flatbread is just basically fancy pizza for grown-ups, right? Use this basic backcountry pizza dough recipe and top with whatever ingredients make you smile! We used store bought pesto, smoked mozzarella, caramelized sweet onions, and chopped tomatoes. Super quick, easy, and will impress the heck outta your friends during your next camping trip.

Savory "Oooey Gooey" Enchilada Pie Comfort food in the woods that feeds a whole team of hungry campers! This was a recipe from Shari's childhood which has been adapted to make in the Banks Fry Bake or in a Dutch Oven on the campfire. This recipe can easily be made gluten-free with an easy wheat flour to gluten-free flour switch.

German Chocolate Cake Celebrating a birthday at a campground or in your backyard?  Bake a scrumptious cake on the campfire for some additional birthday fun!  Hutch made Shari this cake for her 50th birthday...a day she'll never forget!  This recipe can be made completely vegan following the noted substitutions.

Bonus: Cinnamon Rolls! Use half the dough from this recipe to make Cinnamon Rolls the next morning...or for dessert the same night! Just roll out the dough into a thin layer, cover with butter or margarine, a cinnamon / sugar mixture, and chopped pecans. Roll up the dough into a log, pinch the ends closed, cut into pieces, and fry up in the Banks Fry Bake as shown in the video above.
